
LAMB & VEGETABLE SUPREME
This recipe is gluten, wheat, yeast, dairy, nut, egg, soy and fish free.
1 1/2 teaspoons paprika
2 large onions, sliced
2 green or red peppers, seeded and sliced
Splash of extra virgin olive oil
1/2 cup water
2 medium potatoes, peeled and cubed
300g diced lean lamb
440g can peeled, diced, tomatoes (use Annalisa brand for allergy free)
1/2 teaspoon oregano
1 bay leaf
1 teaspoon marjoram
Saute onion and peppers in olive oil until the onion is tender. Add water, tomatoes, paprika, herbs and bay leaf. Reduce heat and simmer for 10 minutes. Add the lamb and potato. Simmer, covered until the vegetables are tender. Remove the bay leaf and season with salt and pepper.
